Easy Chickpea Curry

A straightforward, scrumptious, and wholesome chickpea curry that does not contain any additional oil WFPB

  • 1 can cooked chickpeas

  • 1 large onion, finely chopped

  • 2 cloves of garlic, minced

  • 1 inch of fresh ginger, grated

  • 1 red bell pepper, diced

  • 1 can of diced tomatoes

  • 1 tablespoon of curry powder

  • 1 teaspoon of turmeric

  • 1 teaspoon of cumin

  • 1/2 teaspoon of paprika

  • 1/4 teaspoon of cayenne pepper (optional)

  • 2 cups of vegetable broth

  • 1 cup of reduced fat coconut milk

  • Salt and pepper to taste

  • Fresh coriander for garnish

  1. In a large pot over medium heat, add the onions, garlic, ginger, and bell pepper with a splash of vegetable broth. Sauté until the onions are translucent.

  2. Add the curry powder, turmeric, cumin, paprika, and cayenne pepper (if using) to the pot. Stir well to coat the vegetables in the spices.

  3. Add the chickpeas, diced tomatoes, and the rest of the vegetable broth to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for about 30 minutes.

  4. Stir in the coconut milk and season with salt and pepper. Let the curry simmer for another 10 minutes.

  5. Serve the curry hot, garnished with fresh coriander. Enjoy your Vegan Chickpea Curry!
